[edit] Trout prepared like lobster

Ingredients

whole trout 
water 
salt 
sugar 
dressing suitable for lobster* 
Madeira wine 

Procedure

Clean the trout, remove the scales, and cook the whole trout in lightly salted water. When the trout is cooked, cut it in two along its spine, and remove the bones. Place the two fillets with the meat side up. Cover them completely with sugar and leave them [in a cool place] for 2-3 hours. Remove the skin and any remaining bones, cut the fish into smaller pieces, and mix it gently with the dressing.
