Bimuelos

Bimuelos is a very popular Ḥanukká dish amongst Sefardím from the Balkans and elsewhere. The word “bimuelos” is Judíospanyol and is related to Spanish «bunuelo»; in Turkey, bimuelos are known as lokmas, and in Greece as λουκουμαδες. The modern Hebrew name is סוּפְגָנִיּוֹת (sufganiyyót). Bimuelos are basically small doughnuts: One makes a yeast dough, takes spoonfuls from the dough and drop them into the hot vegetable oil. When done, the bimuelos are dipped in light syrup or sugar water, or one sprinkles some confectionary sugar (icing sugar) over them.
